Wednesday, January 12th, 2011It is very important to get enough water. Water does all kinds of wonderful things for your body.
I recently joined a weightloss challenge. One of the mini-challenges is to drink six 8oz glasses of water a day. Luckily that one is pretty easy for me. I’ve also challenged myself to discover new vegetables. Ok, I admit ANY vegetables will be new to me. I’m not really a veggie eater….. or so I thought! My recent finds are:
Acorn Squash - Maple Roasted Acorn Squash Recipe
Zucchini & Yellow Squash
Spaghetti Squash - cut in half, scoop out seeds, place in micro dish with 1/4 c water in dish, cover. Nuke 12 minutes. I had mine with spaghetti sauce just last night. Will try the other half with butter, brown sugar and maple syrup!!!

The following is a great recipe for Jello Shots. The recipe uses the Large Jello Mold. But I don’t see why it can’t be poured into the mini mold and the Jell-ettes instead! Print it out and give some to your friends! Enjoy!
This is going to be tougher than I thought!
Monday, May 10th, 2010So last night I got out all my pans and ingredients ….and my new camera! I took some really great photos of all the ingredients all lined up, both before and after measuring. A few pics of pouring it into the pan, placing in the fridge. This morning, I took pics of adding the brown sugar crumb topping and placing it into the oven.I was so excited downloading the pics to the computer — so excited, I obviously DELETED most of them. I’m left with only 2 of over 20! Oh well. Better luck next time.

Poured the batter into the 9″ round cake pan and placed in the fridge overnight. This morning I added the brown sugar/cinnamon/nutmeg crumbles and baked for 25 minutes. After allowing it to cool, I drizzled it with icing (milk, confect. sugar and vanilla.) I realize that if Martha or Ms. Deen had made this it would look truly beautiful….. However, I made it ………

Lessons learned:
- when deleting pictures from camera, be sure they are actually on the computer first!
- don’t ask husband to turn off oven after 25 minutes because you are heading to your 30 minutes Curves workout (you will come home to a beeping timer - and a cake which luckily didn’t burn!)
- the kitchen looks much dirtier thru the lens of the camera than thru my own eyes! hmmm

Wednesday, January 13th, 2010It has been so hot here in NY lately. I’m talking nearly 100 degrees. I don’t know about you, but on days like that I simply can’t be bothered wondering what’s for dinner! And don’t even ask me about baking or broiling! Take-out gets expensive …… my solution has been FREEZING portions! This way I can reach into the freezer before bed, pull out a few Tupperware FreezerMates containers, remove what I need, and thaw it in the fridge.
My Large 2 container holds approx 20 quarter-lb hamburgers. I separate each level with waxed paper- then I can remove 4 for grilling! The Small 2 holds approx a 1lb of veggies - dump it right into a microwave dish!
